Savoury tomato & butter roll
250 g mild-soured butter, room temperature
30 g tomato paste
50 ml cold-pressed olive oil
15 g fine natural sea salt
A few grinds of black pepper from the mill
Place the warm butter in a bowl, season with a little salt and pepper and beat on a high setting with the hand mixer until white and fluffy. Add the tomato paste and beat with the hand mixer at level 1. Now pour in the oil in a thin stream, continuing to beat with the hand mixer at level 2. Place a piece of clingfilm on the kitchen table (approx. 30 cm in length). Using a dough spatula, remove the butter from the bowl, spread it onto the piece of clingfilm lengthways as you would sausage meat, and roll up. Seal the resulting roll and chill in the refrigerator for 2 hours. Finally, undo at one end and cut into slices.

Tip: the savoury tomato & butter roll can be transformed into a Mediterranean tomato & herb roll in no time. To do this, simply pluck some thyme, rosemary and fine-leafed herbs such as parsley, sage, chervil etc., and fold into the butter mixture before forming the roll.
