Quark waffles

Quark waffles
Zest of ½ an untreated organic lemon
Zest of ½ an untreated organic orange
100 g soft butter
1 scraped bourbon vanilla pod
400 g quark (40 % fat)
130 g maple syrup
100 ml full-fat milk
2 organic eggs
200 g wheat flour (type 405)
Add the lemon and orange zest to the soft butter with the vanilla pulp and, using the hand mixer (whisk), beat on a medium setting, increasing the speed to level 5 until the mixture turns white. Add the quark, maple syrup and milk and beat in. Separate the eggs and fold the yolks into the butter mixture one by one. Place the whites into a separate bowl. Stir the flour into the butter mixture.
Using the hand mixer (whisk), beat the egg whites on a low setting, gradually increasing the speed until they form stiff peaks, before folding them into the mixture carefully with a rubber spatula. Pour the batter into the waffle maker and bake until golden brown.

Tip: fold a coarsely grated pear into the batter for extra flavour as desired.
