Peppery saddle of pork steak
4 slices saddle of pork (with chops released)
1/2 a tsp. crushed pepper
1 tbsp. rapeseed oil
Iodised salt
3 peppers (red, yellow, green)
8 radishes
1/2 a courgette
200 g green salad (lettuce, oak leaf lettuce, iceberg lettuce)
2 tbsp. balsamic vinegar
1 tbsp. fruit vinegar
2 tbsp. germ oil
Freshly ground pepper
1 tbsp. sliced chives
1 tbsp. chopped parsley
Rinse the slices of meat under cold running water, pat dry and season on both sides with crushed pepper. Place the slices of pork saddle on a grill plate brushed with rapeseed oil and grill. Finally, salt to taste. Clean and wash the peppers, de-seed and cut into pieces. Salt lightly and grill with the meat. Clean the radishes and courgette and shave or cut into slices. Sort through the salad leaves, wash, spin dry and mix with the radish and courgette slices. Create a dressing with the balsamic vinegar, fruit vinegar, germ oil, iodised salt and pepper. Add the sliced chives and chopped parsley for extra flavour. Use to dress the prepared salad ingredients. Arrange the salad on the plate and add the pork steaks and grilled peppers. Serve with garlic baguette.
