PASTA SALAD IN A GLASS
Ingredients
For the dried tomatoes:
250 g cherry tomatoes
2 garlic cloves
250-300 ml olive oil
2 tbsp. chopped herbs
3 garlic cloves
For the dressing:
3 tbsp. balsamic vinegar
2 tbsp. olive oil
1 tbsp. honey
Salt
For the salad:
60 g pasta
1/2 a spring onion
1 packet mozzarella balls
A handful of lettuce
3 cherry tomatoes
10 dried tomatoes
Crunchy topping (e.g. croutons, crisps, nachos)
Preparation
Wash the tomatoes, halve or quarter depending on size and remove the liquid interior. Place the tomatoes in the fruit dryer and dry for 8-10 hours until pliable.
Place the dressing ingredients in a small glass and shake well, or froth in a milk frother on a cold setting until combined.
Pour the dressing into the bottom of the salad bowl, or place in a separate container and add to the salad shortly before serving.
Cook the pasta in salted water until al dente according to the instructions on the packet and strain in a sieve.
Cut the spring onion into thin slices and drain the mozzarella balls.
Wash and quarter the tomatoes. Wash and drain the lettuce.
Place the pasta in the glass bowl or on top of the dressing before layering the spring onions, dried tomatoes, fresh tomatoes, mozzarella balls and lettuce on top. Sprinkle with crunchy toppings like nachos before serving.
