Orange and quark waffles with allspice
Makes approx. 7-8
100 g butter
1 sachet vanilla sugar
2 medium eggs
1 orange
80 ml full-fat milk
100 ml maple syrup
400 g quark, 40% fat
220 g wheat flour
4 g ground allspice
Beat the butter and sugar using a hand mixer. Separate the eggs and fold in the yolks one by one. Grate a little zest from the orange and add to the butter mixture.
Then squeeze the orange, measure out 40 ml of juice and add this to the milk.
Add the flour to the butter mixture. Afterwards, add the orange milk, maple syrup, quark and allspice and mix carefully using the hand mixer.
Beat the egg whites with a pinch of salt until stiff peaks form, using the hand mixer. Carefully fold the egg whites into the mixture using a rubber spatula.
Pre-heat and grease the waffle maker and bake the waffles until golden brown.

Tip: allspice is also known as “four spice”, because it tastes of pepper, nutmeg and cloves in addition to cinnamon.
