Light winter punch from the slow juicer
(Makes 4 cups)
8 pears
8 apples
5 tsp. honey
3 cinnamon sticks
5 star anise
¼ of a tsp. of ground cardamom
1 tsp. ground almonds
100 ml Williams pear schnapps
Wash the apples and pears thoroughly. Then slice them in half lengthways so that they fit in the slow juicer easily. After extracting the juice, warm it in a saucepan on the hob. In the process, ensure that the temperature does not exceed 70-75 °C to preserve as many vitamins as possible. Add the spices to the fruit juice and stir thoroughly. Leave the mixture to infuse for approx. 20 minutes over a medium heat (no more than 70-75 °C). Then add the Williams schnapps and stir well before seasoning with honey. Those making the vegan version can use agave syrup at this stage. Finally, strain the punch and enjoy!
