Halloumi with lemon salsa

Halloumi with lemon salsa
400 g halloumi (barbecue cheese)
2 tbsp. olive oil
For the sauce:
3 tbsp. olive oil
15 black olives
1 small bunch of flat-leaved parsley
The zest of 2 lemons
1 small red onion
2 tsp. white balsamic vinegar
1 small fresh red chilli
Stone and chop the olives before likewise chopping the parsley, onion and chilli. Grate the lemons and reserve the zest. Mix all ingredients together.
Brush the drained halloumi with oil and grill on the barbecue for 3-4 minutes on each side until golden brown. Serve with the salsa. If using a barbecue grill with grill grate, we recommend that you place a grill tray underneath the latter.
