Fresh tomato soup

Fresh and fruity, slightly sour and aromatic - the perfect tomato soup.
Fresh tomato soup
1 kg tomatoes
2 onions
3 garlic cloves
750 ml vegetable stock
3 tsp. tomato paste
Dried thyme
Olive oil
Salt, pepper
Make a crosswise slit in the bottoms of the tomatoes and place in a large bowl. Cover with boiling or hot water. After 10 minutes, carefully remove the tomato skins and stalks, and slice the peeled tomatoes finely.

Now dice the onions and crush the garlic. Fry them both in olive oil and add the pieces of tomato after approx. 3 minutes. After a few minutes, add the vegetable stock and the seasoning (except the parsley) and cook for 20 minutes over a low heat. Stir in the tomato paste and purée the soup finely with a hand blender.
Season to taste with the herbs and serve with a little fresh parsley.
