Filled potatoes

Filled potatoes
6 potatoes
1 red onion
6 - 8 slices of salami
½ a red pepper
100 g peas
1 tbsp. sour cream
1 tbsp. fresh herbs
Salt and pepper to taste
Pre-heat the air fryer to 200 °C. Scrub the unpeeled potatoes thoroughly and dry with some kitchen paper. Place the potatoes in the air fryer and cook for approx. 25 minutes at 180 °C.
In the meantime, finely chop the onions and slice the salami and the red pepper into bite-sized pieces. Remove the potatoes from the air fryer and leave to cool. Now halve the potatoes and remove the soft insides with a spoon, placing these in a separate bowl. Mix the reserved potato with the sour cream and stir in the salami, pepper, peas and herbs. Then season to taste with salt and pepper.
Finally, fill the baked potatoes with the potato and sour cream mixture and serve.
