Elderflower syrup
16 elderflower heads
A litre of water
2 organic lemons
500 g sugar
1 sachet organic citric acid
Shake out the elderflower heads, do not wash.
Boil up the water and sugar until the sugar has dissolved, and leave to cool.
Wash the lemons thoroughly and cut into slices.
Place the elderflower heads and lemon slices into a glass jug, pour the water and sugar mixture over them and leave to rest for 2 days at room temperature.
2 days later: Place a dishcloth in a sieve and strain the mixture. Add the organic citric acid and stir in well. Pour into jars, seal tightly and preserve in the preserving boiler for 35 minutes at 90 °C.
Tastes delicious with sparkling wine or mineral water.
