Courgette spaghetti with dried tomatoes & pine nuts
Ingredients
Ingredients for 2 servings
2 courgettes
70 g dried tomatoes
3 tbsp. olive oil
1 tbsp. lemon juice
30 g pine nuts
Salt, pepper
Parmesan or feta cheese as desired
Preparation
Using attachment I or II, cut the courgette into noodles. Cook in boiling salt water or a steamer for 1-2 until al dente. Strain and drain well.
Dice the dried tomatoes finely, place in a large bowl with the oil, add the courgette noodles and season with lemon juice, salt and pepper.
Toast the pine nuts in a pan without oil.
Garnish
Arrange the courgette noodles on a plate and serve with grated parmesan or crumbled feta and pine nuts.
