Colourful veggie noodles with sesame & peanut sauce
For 2 servings:
Veggie noodles:
1 courgette
1 carrot
1 pepper
¼ a head of red cabbage
A handful of salted peanuts
1 garlic clove
2 tbsp. sesame oil
1 tsp. sesame
Salt, pepper
2 tbsp. peanut butter
2 tbsp. soy sauce
3 tbsp. culinary cream
1 tsp. honey
1 tsp. fresh ginger
1 tsp. apple vinegar
1 tsp. sesame
Using attachment I, cut the carrot and courgette into spirals. Clean the knife attachment as required. Chop the red cabbage and pepper into fine strips using a knife. Chop the garlic.
To make the sauce, place all the ingredients in a small saucepan and bring to the boil. Simmer for 5 minutes over a medium heat.
Heat the sesame oil in a pan, fry the pepper and red cabbage with garlic, add the veggie spirals and season with salt and pepper. Chop the peanuts and sprinkle over the veggie noodles with the sesame. Drizzle the sauce over the noodles and serve.
