Vegan almond mayonnaise

Vegan almond mayonnaise
200 ml sunflower oil
100 ml water
1 tbsp. dark balsamic vinegar
1 tsp. coarse-grained mustard
3 tbsp. dark almond butter from unpeeled almonds
1 tsp. locust bean gum
A little fine natural sea salt
A few grinds of black pepper from the mill
Place the sunflower oil, water, balsamic vinegar, mustard and almond butter in the blender and mix for approx. 2 minutes at level 2.
Stir in the locust bean gum and season the mixture with sea salt and pepper.

Tip: we recommend that those who prefer slightly thicker mayonnaise add a little more locust bean gum.
