Fluffy vegetable omelette
3 eggs
1-2 tbsp. cold milk
1/2 a red pepper
20 g spring onions
80 g mushrooms
Salt & pepper
A little thyme
To start, whisk the eggs, milk, salt and pepper together in the milk frother on the cold setting. Slice the mushrooms into thin slices and sauté in a frying pan. Dice the pepper and add to the pan. Slice the spring onions into rings. Finally, pour in the egg mixture and distribute the rings evenly throughout the batter. Allow to thicken over a low heat. Done!
