Pesto fish with tomatoes

Ingredients:

  • 800 g rosefish (sea perch)
  • 4 tbsp lemon juice
  • 2 bunch/small pot basil
  • 2 cloves of garlic
  • 1 tbsp grated parmesan cheese
  • 2 tsp pine nuts
  • 8-10 tbsp olive oil
  • salt
  • pepper
  • 2 onions
  • 750 g tomatoes
  • 2 tbsp butter

How to make Pesto fish with tomatoes

Wash the fish, pat dry and cut into pieces. Sprinkle with lemon juice. Wash the basil and pluck off the leaves. Peel 1 clove of garlic. Pur裠the basil and garlic together with the cheese, pine nuts and oil, season to taste. Peel and chop the onions and the remaining garlic. Wash the tomatoes and cut them into wedges. Use a steam cooker to steam the fish for about 8 minutes. Heat the butter in a saucepan, then steam the onions, garlic and tomatoes in the saucepan with the lid in place for about 5 minutes. Season to taste and serve.
