Lamb chops with grilled tomatoes
Ingredients:
- 2 red peppers (fresh/glass)
- 1 onion
- ½ - 1 bundle of mint or parsley
- 2 limes
- salt
- pepper
- 6 tbsp oil (eg olive oil)
- 500 g cherry tomatoes
- 8 lamb chops (around 75 g each)
How to make Lamb chops with grilled tomatoes
Wash and clean the red pepper, remove the seeds and chop finely. Peel the onions and cut into fine cubes. Wash the herbs, pluck off the leaves and chop finely. Cut the limes in half and press out and season the juice. Briskly blend in 5 tbsp of oil. Blend the prepared ingredients into the marinade. Wash the tomatoes, pat them dry and slightly cut them crosswise at the top. Wash the lamb chops, pat them off and brush with 1 tbsp oil. Season well. Grill the lamb chops on the hot electric grill for around 4 minutes each side. Place the tomatoes on the grill for the last 2-3 minutes. Turn frequently, season. Arrange on a plate and sprinkle with the marinade. Serve with fresh pita bread.
