Grilling & Feasting
King prawns with grilled tomato slices
Ingredients:
- 8 king prawns peeled (fresh or frozen)
- 2 beefsteak tomatoes
- 1 clove of garlic
- 2 stalks of basil
- 1 twig of rosemary
- 2 tbsp olive oil
- iodine salt
- freshly ground pepper
How to make King prawns with grilled tomato slices
Rinse the king prawns under cold tap water and, if necessary, remove the black vein. To remove the vein, cut in lightly along the middle of the thick part. The vein can now be removed with the fingers. Rinse the prawns off again and pat them dry with a suitable paper towel. Wash the tomatoes, remove the stem and cut into 1 cm slices. Peel the garlic and squeeze it through a garlic press into a bowl. Rinse off the basil and rosemary, dry them off, pluck off the leaves, chop finely and add to the garlic. Add the olive oil to the garlic and mix with the ingredients. Season with iodine salt and freshly-ground pepper. Turn the prawns and tomato slices separately in the marinade, let them drip off and put them on the hot electric grill (setting 5); grill each side for 4 - 5 minutes. During grilling, brush with the remaining oil. May be served with fresh garlic baguette. Hint: When buying king prawns, make sure that the raw (or pre-cooked) prawns have not been previously deep-frozen, as they will keep only for a short time. With deep-frozen king prawns, ensure that the inside of the packaging is free of frost, and that the meat does not show any dry spots.
